Born in Dublin, Gilmartin played for St Kevin's Boys Club in his hometown before accepting a professional contract with Walsall in 2005. He spent five years at the Bescot Stadium, including loan spells at Worcester City and Hednesford Town, and also made his international debut at under-19 level in February 2006, followed by the under-21s a year later. In all he made 37 first team appearances for Walsall, but in the summer of 2010, having turned down a renewed contract offer, the 6ft 5in Irishman made the step up to Championship side Watford. He played second fiddle for most of his two seasons at Vicarage Road, although he did have successful loan spells with Yeovil Town and Crawley Town, both in 2011-12.

After his contract with Watford was not renewed, and following a glowing reference from Paul Wotton, a team-mate whilst at Yeovil, Gilmartin signed for Argyle in July 2012.
